The best way to store your coffee:

  • Keep in the original one-way valve bag, fold top, seal with a bag clip, and squeeze out the air.  Then, just place in a cool place away from sunlight and heat.

Do not store in:

  • Airtight containers.  While they do keep out detrimental air which will quickly degrade your coffee, they also seal it in and do not allow the coffee to "breathe" and "de-gass".

  • Vaccum containers.  These are a little better as they eliminate the air, however, these also do not let the coffee "breathe" and "de-gass".

  • Open Air.  Do not use any container that allows air to interact with the coffee.  This will quickly turn your coffee into stale, undrinkable coffee.

  • Freezer.  Freezing coffee beans will allow moisture to attach to the coffee.  Moisture and water is bad for coffee. However, that said, how can this happen if it is one-way valve bags?  Probably any moisture that is already in the bag at the time it is bagged.  Once thawed, the moisture interacts witht he coffee causing rapid degradation.  We do have many customers that buy our coffee in quantity to save on shipping and freeze it.  They never re-freeze once opened and tell us that the coffee is still outstanding.  They may be consuming the coffee quickly thereby eliminating the time neccessary to affect degradation.  If you do freeze unopened bags, never refreeze once opened.  We will test this and comment on it in the future.  At this time, we cannot recommend this method.

  • Refrigerator.  See above about freezing.  The same thing applies to cold and moisture.  Never place opened coffee into a refrigerator.

We do not ship old coffee.  In one-way valve bags, our fresh roasted coffee will keep for three to four months.  Most coffee drinkers will never taste the difference in our coffee during that time.  While you will find many who do not recommend this, it is probably because they are not used to drinking our quality of coffee.  Once your pallet adjusts to our coffee, you may then find you will be able taste a difference and adjust your ordering accordingly.
